Tomatoe & basil soup
















Ingredents:
1 Tin chopped tomatoes
1 litre of warm water with vegetable stock
80g onion
80g leek
80g celery
5g salt
white pepper
1 garlic clove
20g granulated saugar
20ml red wine vinegar
20g fresh basil

How to make it:
Frist chop the onion, leek & celery then sweat them off in a saucepan with oil in, then add the granulated saugar & red wine vinegar, stir together & reduce to a light syrup.
Then add the tin of chopped tomatoes & chopped baisl into the saucepan, cook for 10 minutes.
When those 10 minutes are up add the vegetable stock & bring it to the boil.
Then liquidise it with a hand blender. Drain it off & throw the pure away & then u are left with the liquid & thats the perfect soup.
